Fall Sweet Potato Soup/Sopa de camote

It’s the time of year for soup again, and the markets are filled with all the fixings! Take home some butternut squash, pumpkin, acorn squash, sweet potatoes, potatoes, onions or carrots and make a delicious soup today! This one is easy, healthy, tasty and can be served hot or cold- enjoy!

Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 cup low-sodium chicken or vegetable stock
  • 2 medium sweet potatoes, peeled and diced
  • 5 large carrots, peeled and sliced
  • 1 tbsp. fresh ginger, chopped
  • 2-3 tbsp Plain nonfat Greek-style yogurt (optional)

Directions: Sauté onion lightly, add stock and 2 cups water, and then sweet potato, carrot, and ginger. Bring to a boil, then reduce heat and simmer until vegetables are tender (~15 min.) Strain out vegetables, allow to cool and blend until smooth. Pour vegetable puree back into the saucepan and stir until well mixed. Add salt, pepper and a dollop of yogurt on top, if desired.

Ingredientes:

  • 1 cuchara aceite de oliva
  • 1 cebolla, picada
  • 1 taza caldo de pollo o vegetales, bajo en sodio
  • 2 camotes, picados
  • 5 zanahorias grandes, picadas
  • 1 cuchara jengibre, picado
  • 2-3 cucharas de yogur natural griego

Preparación: Freir la cebolla unos minutos y añadir el caldo y 2 tazas de agua, y después los camotes, las zanahorias y el jengibre. Hervir la sopa y después cocina en fuego lento hasta que los vegetales estén cocidos (~15 minutos). Colar los vegetales, espera hasta que estén menos caliente y moler los vegetales. Poner de vuelta en la olla y mezclar. Anadir sal, pimiento y agregar un poco de yogur al final si quieres. Disfruta!
