Sautéed Butternut Squash/Calabaza con queso

It’s officially fall, so squash and  pumpkins are back at the market and as delicious as ever! Great for soup, salad, dessert and more, make sure you pick one up soon!



  • butternut squash (cubed)
  • garlic
  • olive oil
  • water
  • feta cheese
  • scallions
  • raw pumpkin seeds



Directions: Cook squash in ½ inch of water until the squash is tender. Sauté cut-up squash and chopped garlic in a little bit of olive oil until golden. Sprinkle with sliced scallions and crumbled feta. Enjoy!




  • calabaza/yama (picada)
  • ajo
  • aceite de oliva
  • agua
  • queso de feta
  • cebolleta
  • pepitas crudas

Preparación: Cocina la calabaza en ½ pulgada de agua hasta que este bien cocida. Saltear la calabaza con ajo picado y un poquito de aceite de oliva hasta que la calabaza este un poco marron.  Anade las cebolletas y el queso picado. ¡Disfruta!
