Pineapple Fried Rice/ Arroz Frito con Piña

Pineapple Fried Rice

  • 2 cups cooked brown rice
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp fresh or dried ginger
  • 1 red bell pepper, chopped
  • 1 cup pineapple, chopped
  • 1 cup carrots, chopped
  • 1/2 cup avocado
  • 1 cup broccoli
  • 1/2 cup cashews or sesame seeds
  • 3 tbsp sesame oil
  • 1 tsp red chili flakes or fresh red Thai chilies
  • 2 tbsp soy sauce or tamari
  • 1/2 cup scallions, chopped
  • 1/2 cup mint or cilantro, chopped

Directions: Cook rice and set aside. Saute onions, garlic, and ginger in sesame oil. Saute pineapple and bell peppers until caramelized. Add carrots and broccoli, sauteing until cooked. Mix in nuts, rice, chili flakes and soy sauce. Top with avocado, mint and scallions. Serve with beans or tofu for a complete protein.

Arroz Frito con Piña

  • 2 tazas arroz integral, cocido
  • 1 cebolla roja, picada
  • 2 dientes ajo, picado
  • 1 cucharada gengibre fresca o en polvo
  • 1 pimienta roja, picada
  • 1 taza piña, picada
  • 1 taza zanahoria, picado
  • 1/2 taza aguacate
  • 1 taza broccoli
  • 1/2 taza nueces o ajonjoli
  • 3 cucharadas aceite de sesamo/ajonjoli
  • 1 cucharada chile rojo en polvo o fresca
  • 2 cucharadas salsa de soya o tamari
  • 1/2 taza cebollin, picado
  • 1/2 taza menta o cilantro, picado

Como hacerse: Cocina el arroz y apartar. Sofríe cebolla, gengibre y ajo con aceite para acitronarla. Agregar y acitronar pimientos y piña. Agrega zanahorias y broccoli y sofrie hasta que se cocinen. Mezcla nueces, chile rojo, arroz y salsa de soya. Agrega aguacate, cebollin y menta/cilantro encima.  Sirve con frijoles o tofu para una proteina completa.
