Carrot and Beet Slaw/ Zanahorria y Betabeles Rallados

This recipe is great to put on sandwiches or as a side dish!

Beets, carrots and mint are all high in vitamins and minerals that protect us from developing chronic diseases like heart disease, diabetes and cancer. Beets are high in vitamin C, which boosts the immune system. Carrots have lots of vitamin A, which is great for eyesight. Mint is also high in vitamins and minerals, and is used by many cultures for stomach problems, digestion, and respiratory diseases.

Esta receta es deliciosa para poner encima de tortas, o sólo para acompañar la comida o cena!

Los betabeles, zanahorias y yerbabuena contienen muchas vitaminas y minerales que nos protegen de enfermedades como infartos, diabetes, y cáncer. Los betabeles contienen mucha vitamina C que fortalece el sistema immunológico para prevenir enfermedades. Las zanahorias es buen fuente de vitamina A que protege a los ojos. La yerbabuena o menta también contiene varias vitaminas y minerales y se usa en varias culturas para problemas del estómago, digestión, y respiración.

Carrot and Beet Slaw

  • 3 cups carrots, shredded
  • 2 cups beets, shredded (don’t throw away the beet greens! They are edible and delicious in stir fries, soups and salads!)
  • 1 bunch mint, chopped finely
  • juice from 1 lemon
  • 2 teaspoons red wine vinegar
  • 1 tablespoon olive oil
  • salt and pepper to taste

 

Zanahorria y Betabeles Rallados

  • 3 tazas zanahoria, rallada
  • 2 tazas betabeles, rallados (no tiras las hojas! Son comestibles y deliciosas en guisados, sopas y ensaladas!
  • 1 manojo de yerbabuena o menta, picada
  • jugo de 1 limón
  • 2 cucharaditas vinagre
  • 1 cucharada aceite de oliva
  • sal y pimienta al gusto
